Hummus Avocado Toast Recipe

This is one of my all time favorite foods to eat as a meal or snack included in my Yummy Healthy Recipe book that has over 40 delicious smoothies, snacks and desserts!
Ingredients:
1 slice of whole grain bread, toasted
2 tbsp. hummus
6 thin cucumber slices
1 small radish
¼ sliced thin avocado
sliced thin crushed red pepper flakes, to taste
1/8 tsp. kosher salt black pepper, to taste
1/4 cup baby arugula
1 wedge fresh lemon
Directions:
1. Spread the toast with hummus, top with cucumber, radish and avocado, sprinkle crushed red pepper flakes, salt and black pepper
2. Top with arugula and lemon juice
3. Serve and enjoy!
